The cold is going around again, and it seems like no matter what I do I catch a cold every February without fail. Thankfully it's just a little cold (not the epic ones that keep you on the couch all week) and I've managed to keep my sense of taste this time! So a nice kale snack with garlic and olive oil is exactly the little "pick-me-up" my body could use right now.
It's a nice light snack that packs a nice zesty punch that brings back my happy thoughts (somewhat). And if you haven't heard, Garlic is a natural remedy for fighting off colds. Plus it has all the green goodness of Kale and healthy fats from the Olive oil, so now you have no excuse.
If you've never tried Kale chips then I know you're thinking they might taste like crispy green grossness, but you'd be surprised (I certainly was). The secret to these is the garlic, salt, and oil make them taste like an actual store bought chip minus all the MSG and other stuff that never agrees with my stomach.
Not to mention these things are ADDICTIVE. Seriously, try not to eat the entire batch shortly after they leave the oven. I've heard these store great for snacks, but I've never made it that far... soo yeah.
This is as straight foward as they come, tear apart a bunch of kale into bite sized pieces (removing the stem) and drizzle a garlic, red pepper flake, and olive oil mixture over the kale. Use your hands to mix it up so that everything is coated nicely. Add some sea salt and pepper and you're ready to rock.
The kale will shrivel up a bit while in the oven, that's normal. Give it about 10 minutes and a few minutes to cool and enjoy your new favorite healthy snack 🙂
Spicy Garlic Kale Chips Recipe

Ingredients
Makes 4 Servings
- 8 cups kale, stems removed and leaves torn into bite sized pieces
- 4 Cloves of Garlic, Crushed
- 2 Tbsp olive oil
- 2 tsp red pepper flakes
- Sea Salt, to taste
- Black pepper, to taste
Instructions
1. Preheat oven to 300 degrees F.
2. In a small bowl whisk together the olive oil, crushed garlic, and red pepper flakes.
3. Remove stems from Kale, then tear leaves into bite sized pieces.
4. Lay a piece of parchment paper onto baking sheets and lay the kale on the paper.
5. Drizzle the olive oil mixture on to the kale, toss or use hands to mix up the kale until you have an even coating of oil on all the leaves. Season with sea salt and pepper to taste.
6. Bake the kale in the oven for 10-15 minutes, until crispy.
7. Let cool and Enjoy!
