Paleo Chocolate Chip Cookies

Chocolate chip cookies are my ultimate weakness, more than any other type of sweet or comfort food. So it was absolutely necessary I find a good cookie recipe that is Paleo and Gluten Free or else I wouldn't be able to move on with my life. Ok, maybe it's not that important but still, I love cookies. A lot.

Paleo Chocolate Chip Cookies

So to take on this recipe we need something really simple and delicious. Because sometimes simple is just better, no need to overcomplicate things, especially the classic chocolate chip cookie.

First thing, you'll need some Almond Flour, I always find this in the organic aisle at the grocery store, but sometimes you have to do a little digging around the store to find them.

Be sure to get a high quality chocolate chips too. Higher quality ingredients will make these cookies even better.

The key to cleaning up these cookies isn’t just the alternate ingredients. It’s making sure your ingredients are whole and not filled with fillers and junk. Reading a food label is more than the nutrition information. The ingredients list is extremely important when hoping to cut processed foods from your diet. Learning to read food labels can be a paleo enthusiast’s secret weapon. Many “health” foods have secret hidden ingredients disguised as ingredients like, rice syrup, lactose, corn syrup, maltose, fruit juice concentrate, and even “natural flavors.”

This is especially true when looking at the alternative milks as well as vanilla extract and even the almond flour. Be caution of coconut milk and almond milk that contains guar gum, and other hidden additives and sugars. Look for product that have only a few ingredients and contain words you can easily pronounce.

​If you're having trouble finding high quality ingredients I recommend you find a Whole Foods, or an Organic food market rather than the local grocery store. The clerks here will be far more knowledgeable and helpful in making sure you get the right stuff!

Ingredients

Makes 10 - 12 Cookies

  • 2 cups blanched almond flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • dash, nutmeg
  • 1/3 cup honey
  • ¼ cup coconut oil (Melted)
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips (paleo friendly)

Instructions

1. Preheat oven to 350 degrees F.

2. Grease a baking sheet with coconut oil (or coconut oil cooking spray).

3. In a large bowl whisk together the almond flour, baking soda, salt and nutmeg.

4. In another bowl whisk together the honey, coconut oil, and vanilla extract.

5. Add the wet ingredients to the dry and mix together with a wooden spoon until well incorporated.

6. Fold in the chocolate chips.

7. Use your hands to press and form 1 inch balls of the dough. Place the balls evenly onto the cookie sheet.

8. Press down gently on each ball of dough with the palm of your hand or the back of a wooden spoon to flatten each cookie out a bit. (Form them into a flat cookie shape rather than a ball)

9. Bake for 8 - 12 minutes, until cooked through.

10. Remove from the baking sheet and allow to cool on a wire rack before serving.
