Mole Sweet Potato Chips

Need to spice up your life a little? How about some spicy chips? There's a ton of baked Sweet Potato chip recipes out there, but none of them have that little kick of hotness I like to have every once and a while.

This has a little Paprika and Cumin to add some heat, a little cocoa powder to really bring out the flavor, then just add a little sea salt and you got a pretty awesome healthy snack.

I've been working long hours at work lately, and I just needed something to put in a plastic container that I can munch on until I escape work.

Seems like most people just hit the vending machine to fill their void, or worse: they just starve until it's dinner time. I don't know about you, but when I don't eat for an extended period of time I get CRANKY. But if you eat crap food your brain turns to mud. So this is my Magic Sweet Potato Solution! (Patent Pending?)

It's pretty easy; evenly slice your sweet potato into 1/8" inch slices. Get a mandolin and this turns into a 30 second task. Lay each piece in a single layer on a sheet of parchment paper placed on a baking sheet and throw it in the oven set at 350 degrees F.  You'll probably need a few baking sheets, or do this in a few batches.

The thinner you slice, the shorter the cook time. If you want to shorten your cook time it may be ideal to go ultra-thin. I find with 1/8" inch slices I need to cook them for 10 minutes on one side, flip, then another 5 - 6 minutes. Just keep an eye on them and when the edges begin to char (turn black) it's time to take them out.

If they don't have your ideal crispness then put them back in for 4 minute increments until you find that magic cook time. Write down how long you cooked them for and the thickness you sliced so you know for next time.

Ingredients

Makes 4 Servings

  • 1 Large or 2 Small sweet potatoes, cut into 1/4" discs
  • 1 tbsp coconut oil, liquid
  • ½ tsp chipotle chili powder
  • 1 tsp unsweetened cocoa powder
  • ½ tsp cumin
  • ½ tsp sweet paprika
  • sea salt, to taste

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Line a rimmed baking sheet with parchment paper.
  3. Combine the spices in a small bowl.
  4. Add the sweet potato discs to a bowl.
  5. Drizzle the coconut oil over the sweet potatoes and add the spice mixture.
  6. Toss to coat.
  7. Place the chips in an even layer, without touching. Will need to be done in several batches or multiple baking sheets.
  8. Bake in preheated oven for 10 minutes. Then flip them over.
  9. Bake another 5-6 minutes or until they are browned without overcooking.
  10. Repeat with remaining potatoes discs.
  11. Place cooked chips on a paper towel lined plate.
  12. Serve immediately.
